A few weeks ago I wrote about 7 Super Hydrating Foods. Watermelon, of course, was at the top of the list! Well, today it get its own day of recognition—National Watermelon Day! I don’t know what the temperature is like where you are, but here in Cali it’s scorching! On a hot day, there’s nothing quite like sweet, juicy chunks of watermelon (already cut up so I don’t have to make a mess!) right there, ready to go, in the fridge! Or is there…???

At any rate, while I was looking for Watermelon Mojito recipes I also stumbled upon these AMAZING Watermelon Mint Popsicles from Homegrown Provisions (UPDATE: Seems that Homegrown Provisions has shut down their website, but luckily we have the recipe below). They don’t have any alcohol in them (although I’m sure you could improvise!) but that makes them perfect for all-age summer entertaining along with kids parties, bridal showers, BBQs and more! Ready? Suck on this…! (Tee hee, I just had to!)
Watermelon Mint Popsicles
Here’s what you’ll need:
1 cup organic cane sugar
¾ cup water
½ cup of finely chopped mint leaves
Juice of 2 limes
4 cups seedless watermelon (cut into 1-inch chunks)
How To Make Them:
- Combine the water, sugar and mint in a small saucepan.
- Heat the sugar mixture over medium heat. Whisk occasionally until the sugar dissolves.
- Remove saucepan from heat and cover with a lid.
- Let the mint simple syrup steep at room temperature for 30 minutes and then refrigerate until chilled (about 30 minutes).
- While the mint simple syrup is cooling, puree the watermelon in a blender.
- Place the watermelon puree in the refrigerator and let chill (about 30 minutes; this can be timed alongside the cooling period for the mint simple syrup as well).
- After chilling, remove the mint simple syrup from the refrigerator and add in the lime juice and watermelon puree. Mix well.
- Poor mixture into popsicle mold and let freeze overnight.
