While I’m in Ecuador I thought I would come up with a lot of inspiration and maybe even some good recipes. I have a whole blog planned for the subject of empanadas alone. I think they are going to be my new Latin version of the potsticker bar. I’m in love!
I digressed. If you’ve ever eaten calamari, even at a really good restaurant, it’s often rubbery and challenged. Now I haven’t tried this yet, but I have it on good authority that if you marinate the calamari in a little bit of passion fruit juice, it will be amazingly tender.
