While debating our dessert options for Christmas Eve and Day (we have yet to think about the main course, but dessert obviously needs more attention) we were craving something unexpected, seasonal, and universally likeable.
That’s when we stumbled upon this recipe for an apple and pomegranate crisp and we realized our overall lacking in pomegranates this winter.
Ingredients
4 medium apples – peeled, cored and sliced
1/2 pomegranate, skin and light-colored membrane removed
1/2 cup brown sugar
1 tablespoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup rolled oats
1/2 cup all-purpose flour
1/2 cup white sugar
1/2 cup unsalted butter, melted
Directions
1. Preheat the oven to 375 degrees F (190 degrees C). Butter a 9×13 inch baking dish.
2. In a large bowl, toss together the apples, pomegranate seeds, brown sugar, cinnamon, and nutmeg. Spread evenly into the prepared pan. In the same bowl, stir together the oats, flour and sugar. Rub in the butter between your fingers until the mixture resembles coarse crumbs. Sprinkle over the top of the fruit.
Bake for 45 minutes in the preheated oven, until the apples are soft. Let stand 10 minutes before serving. Serve warm or at room temperature.
Our two favorite things about this recipe are its inclusion of the super fruit, pomegranate, and its holiday appropriate colors. The finished product just screams Merry Christmas. We are thinking that might just be our food theme…a creative use of red and green…
How about a red cabbage salad?
Slice up some red cabbage sprinkle in goat cheese, avocado and cranberries. Toss in oil and vinegar, salt and pepper to taste. Viola. Red and green with a dusting of goat cheese-snow.
Don’t worry, we aren’t going to add food-dye to our roast beef… yet…
The only thing that would make this even more perfect would be a homemade pomegranate martini!
